At XUNTOS, the cellar is built for the way we like to eat. We look for the same things that Sandra does in the kitchen: great ingredients, thoughtful farming, a light touch, and an instinct for what feels right in the moment. Our rotating wine pairing is four wines for $50, chosen for the Tapas Tasting Menu—or we can build a pairing around whatever you order à la carte.

OUR APPROACH
We seek out winemakers with a point of view—whether they’re rooted in tradition or pushing Spanish wine somewhere new.
In the glass, we look for wines that pulse with energy: delicious, textural, savory, refreshing. Wines that are fun to drink and make you want another glass, but can also make you stop and pay attention. Wines with character, a sense of style and something to say.
Or, as our friend Lindsay put it: “the very best artisanal and natural wines from Spain:
small-production, highly precise, and reflective of the vintage and the people farming the vines and making the wine.”
ATLANTIC / MEDITERRANEAN
Backroad trips through Galicia and Catalunya—visiting winemakers, eating anchovies, and plenty of long nights in Barcelona wine bars—have shaped how I think about wine, and the way we drink at XUNTOS. We have a particular love for the freshness and tension of the Atlantic, and the warmth and generosity of the Mediterranean. BAR XUNTOS draws inspiration from both, translated through Los Angeles.
PEOPLE BEHIND ThE BOTTLES
For me, a wine list is also a personal history of people, places and moments in time.
XURXO ALBA · ALBAMAR · RÍAS BAIXAS
Xurxo was our first tour guide in Rías Baixas. He arrived with nets of mussels from his parents’ fish shop, opened a twenty-year-old tin of sardines, and showed us the vineyard he planted right on the beach—a vineyard we’ve been watching grow up ever since. We’ve caught up in Miami and over Korean BBQ in Brooklyn; now we’re waiting for the day we get him to Los Angeles.
JOAN & ÀNGELS RUBIÓ · PENEDÈS
We first hosted Joan and Àngels at XUNTOS, then visited them in Penedès—vineyards, Volkswagen, cellar, teenage sons, enormous dogs, and a night on the town in Sitges. Their wines are profound and nourishing. Joan likes to say that the wisdom of the grape is in the skins, and calls what he does “maximum intervention” winemaking: nothing but grapes, gravity and a long attention span.
ROBERTO SANTANA, ALFONSO TORRENTE, LAURA RAMOS & JOSÉ MARTÍNEZ · ENVÍNATE · RIBEIRA SACRA + CANARY ISLANDS
As a young(er) sommelier, I was lucky enough to taste some of the first Envínate wines to reach the U.S., without quite knowing how much they would come to mean to me. Twelve or thirteen years later, it was a career highlight to finally host Alfonso and Roberto at Xuntos. Their wines feel sculptural and beautifully proportioned—precise, resonant, without excess.
SANDRA BRAVO · SIERRA DE TOLOÑO · RIOJA
Sandra Bravo’s wines have been a constant presence on our list since we first tasted them: herbaceous, concentrated reds from the mountains on the Basque side of Rioja, and whites that are tranquil, meadowy and exotic. We discovered them only a few weeks before Sandra’s first visit to Los Angeles. The next year we hosted José Mas from Priorat—who turned out to be her husband.
RAJAT PARR · CALIFORNIA
Raj is endlessly curious about vineyards, soils and great wine—always looking for something new in the unfamiliar, or the glint of the unfamiliar in what he already knows. We’ve visited his vineyards in Cambria, where he has planted Mencía, welcomed him to Xuntos, and joined him for harvest at Lone Wolf Vineyard in Temecula.
ANTONELLA GEROSA & MASSIMO MARCHIORI · PARTIDA CREUS · BAIX PENEDÈS
We toured the cellar with Antonella while Massimo was outside repairing—or possibly expanding—the pizza oven. Italians who made Catalunya their home, they have absorbed its customs, varieties and secrets while helping mentor a younger generation of winemakers. Their wines can be wild or gentle, sometimes both, and their vermouth deserves a place behind every good bar.
SARA PÉREZ & RENÉ BARBIER · PRIORAT / MONTSANT
Both come from families foundational to modern Priorat, but neither seems especially interested in standing still. Their wines can be supple, silky and generous while remaining restless and exploratory. We visited in March after several years of drought and found the hills completely green—a reminder that even landscapes you think you understand will surprise you.
